Over the years, we have spent a great deal of time and thought in sourcing our produce and raw materials for the kitchen and believe that provenance is the key factor to help our team to prepare and cook outstanding dishes. This is because the men and women who supply our kitchens are deeply passionate about what they grow and produce and above all, have absolute integrity. Therefore, it was only a short step to take when deciding how to change our Wine List.
Surely, the same principles must apply when selecting wines but at the same time, we felt that it was time to simplify our wine list, just as we had done with our menu for a number of years. After considerable deliberation and consultation with our friends and customers, we have decided to offer a short selection of outstanding wines which will be the perfect match for our kitchen’s style of food and which will reflect the seasonality of our produce.
These are all wines from France as they are unquestionably amongst the best food partners from the wine world. In most cases, these wines are exclusive to Combe House, as they have been especially shipped for us. They are wines from very small parcels of outstanding land (terroir) that would be difficult to sell on a real commercial basis, as they are only produced in tiny quantities and are usually only offered for sale from the cellar door.
In a world where there is simply too much wine produced on an industrial basis, we have turned to individuals that are artisan-craftsmen, who eschew the use of chemicals in their wines and use no man-made fertilisers, insecticides, fungicides or herbicides. The natural eco-system of their soils and vineyards is paramount to them all and many of our producers are organic and sometimes, biodynamic. Fantastic quality grapes are essential when it comes to making first-class wines and purity of flavour only comes with healthy vineyards with a natural biodiversity.
