We choose our suppliers carefully and visit producers whenever we can. Our produce is sourced as much as possible from farms and producers local to Combe House.
Additionally, home-grown aromatic herbs, fruit and vegetables are hand-picked from Combe’s large, restored Victorian Kitchen Gardens. Combe now rears Burford Brown chickens in the heritage Putt apple orchards at Combe Thatch House & Cottage. You will also discover egg-laying chickens exploring freely in our woodland gardens adjacent to the hotel.
Combe’s unusual and varied wines, and genuine hospitality, are always on the menu.
It is up to each of us, be it consumer, chef or hotelier, to make responsible choices. By working with like-minded organisations we try to ensure that we place ethical responsibility, knowledge and education in the mind of each member of our team. We aim to reconnect gastronomy with all aspects of our food production, be it soil, ecosystems, sustainability, or our own farming land and producers, and we try to make responsible choices, so we can ensure a sustainable food chain.
We use as much of our own organic fruit and vegetables as possible, respecting the rules of seasonality and supplement with produce from local farms and producers.
Fish comes from Marine Stewardship Council suppliers and we have been doing so for many years. It is delivered each morning having been caught by day boats out of Lyme Bay. Some specialist fish comes from Scotland.
Dairy - our cheeses are all handmade in the West Country. Milk and cream are from a small local dairy ~ we make our own natural yoghurt.
Eggs - our eggs are our own! Combe now rears Burford Brown chickens in the heritage Putt apple orcahrds at Combe Thatch House. You will also discover happy egg-laying chickens exploring freely in our woodland gardens adjacent to the hotel.
Meat - beef, lamb, mutton, pork, chicken, duck & goose, bacon & sausages, combine everything we look for … contented animals that have been well catered for and then hung, matured, trimmed and prepared with dedicated expertise, and, above all, it tastes marvellous.
